Chewy English Toffee Cookies

*If you do not want to make toffee, search your local supermarket for the best quality toffee. Either chop it up yourself or buy it already chopped. Iit might be hard to find because all you want is plain toffee, no almonds or chocolate.

Chewy English Toffee Cookies
2 ½ c all-purpose flour
1 t baking soda
1/2 t salt
6 T butter softened (3/4th a stick)
3/4 C granulated sugar
3/4 C packed light brown sugar
1 t vanilla extract
2 eggs
3/4 C Toffee
3/4 cup of sliced almonds*
1 Regular size Hershey’s chocolate Bar Chopped fine*

Instructions:
Heat oven to 350 F. Stir together flour, baking soda and salt.
In large mixer bowl, beat butter, granulated sugar, and brown sugar until well blended. Add eggs one at a time, mix until mostly incorporated, then add the vanilla; blend thoroughly. Gradually add flour mixture. Stir in toffee bits, chopped chocolate bar and Almonds and mix well. Drop by rounded teaspoonfuls onto lightly greased cookie sheet. Bake 9 to 11 minutes or until lightly browned. Cool slightly; remove from cookie sheet onto wire rack. Cool completely. About 3 dozen cookies

* These last two ingredients (chocolate and almonds) are for the English toffee cookie. If you want a plain toffee cookie, omit these last two items.
